Remembrance Day Cake

I got a recipe from my Oma for a lemon poppy seed cake. It sounded delicious so I had to make it! My Aunt Michèle then sent me an email giving me some suggestions for cupcake ideas. She mentioned I could make something for Remembrance Day. My family and I went out to dinner tonight to my grandparents house so I thought that this all worked perfectly. I would make the dessert!
I decided to make a cake instead of cupcakes, because I thought it would be a nice change to work on a bigger piece.
Hope you enjoy!

Lemon Poppy Seed Cake!
The cake baked.
Cooking the Lemon Curd that goes between the cake layers.
Spreading on the Lemon Curd!
Putting the cake together
The icing is made of the leftover Lemon Curd and whipped cream. It is very light and doesn't make the cake rich!
Since it is a Remembrance Day cake I decided to make a Poppy for the top of the cake. I cut out and formed petals made of gum paste.
Placing the petals on top! The pile of lemon zest is make the petals a little higher than the top of the cake.
Once the petals were placed on the cake, I put a pile of poppy seeds in the middle to look like....well the poppy seeds. I put lemon zest around the edge to make it a little more decorative.
The finished product!
Success!
I have to say, I think this is my new favorite cake recipe! It was wonderful! Thank you Oma for sending it!
