Grandad's Carrot Cake

My Grandad celebrated his 70th birthday last week so I made him a carrot cake.

I started by grating the carrots.

Before they went in the oven. I'm putting the smaller cake on top of the big one. I thought I would try it out.

Cooling

Obviously cream cheese icing.

Starting to lather on the icing!

Put the little one on the top.

Smooth it out.

Placing pieces of pecans around the edges.

Almost done...

A nice big 70 on top!

Moist and delicious!
